Mango Salsa. Yum! This one is my one of my favorite little salsas to mix up. It doesn’t really take a lot of effort. Now you may be thinking it’s fall. I don’t want a fruity salsa in the colder weather. This salsa is good for all year round and I’ll tell you why. You add some fresh grated ginger which packs a little bit of spice to have you feeling warm inside.
1 ripe Mango, peeled and diced into 1/4 cubes
1/8 cup fresh cilantro
2 teaspoons grated ginger root (peeled)
Fresh squeezed juice and zest of 1 lime
Handful of pomegranates.
Cut mango into 1/4 cubes. Chop up the fresh cilantro. Put all the ingredients into a small bowl and mix by hand. Too easy! Use right away or refridgerate until ready to use. I like to let it sit to let the flavor of the ginger and cilantro sink in for about 30 mins.
Okay so what can you use mango salsa for? It is a great compliment for a fish dish, or fish tacos. I use it to top a warm quinoa salad or add some pizzazz to brown wild rice. Use however you like. It is delicious and so good for you.
How good for you is it?
The mango is full of vitamins C, A, B6, fiber and magnesium. The cilantro – also full of fiber but cilantro is best known as a great detoxifier – helping your body rid itself of heavy metals. The ginger is an awesome antioxidant and anti-inflammatory with immune boosting properties to keep illness at bay. An the pomegranate is full of antioxidants. I could go on and on but these are just some of the incredible health benefits from the sassy little salsa.
